Proving yet again that Sangiovese has a new home in the world near Heathcote, we grow our Sangiovese as a mix of old-world suitcase clones and some great selections from the modern era. Mostly dry-farmed these vines live with minimal intervention amidst our interplanted ecosystem, using regenerative techniques. Whole berries marry in open top fermentation with native yeast and daily hand punchdowns. The 2021 8 Track Sally bubbled away to dryness where it then rested on its generous skins until it tasted ready for a second life, one spent swirling away in a concrete egg. 8 Track Sally sees no oak whatsoever and resides on its lees right up to bottling. Textures dance across the palate as they brighten and sass the senses.
